Sheet Pan Salmon


If you're looking for easy and healthy, there is nothing better than sheet pan dinners, here we use a delicious salmon fillet. Enjoy!


Ingredients

4 (6-ounce) salmon fillets, or a larger piece

1 bunch asparagus, ends trimmed

1 red onion, cut into wedges

2 tablespoons extra-virgin olive oil

2 tablespoons fresh lemon juice

Sea salt and pepper, to taste

Instructions

Preheat oven to 400°F.

Place salmon fillets, asparagus, and red onion on a baking sheet. Drizzle olive oil and lemon juice over the top of the salmon and veggies. Season with salt and pepper. Bake for 10-15 minutes, or until the salmon is cooked through and the veggies are tender.

Note: you can also add sliced baby potatoes, sliced sweet potatoes, or baby tomatoes. Serves 4.
